Lamp oil, not food
The world lit its lamps with whale blubber. When it ran short, industry went hunting for something cheaper — and turned to the seed.
1894
From garbage to your table
Cottonseed oil was literal waste in 1860. Fertilizer by 1870. Cattle feed by 1880. “Table food” by 1890.
1908
The chemistry that changed everything
Hydrogenation is invented — a way to turn cheap liquid oil into a shelf-stable solid that looks a lot like butter.
1911
Crisco
Procter & Gamble hardens cottonseed oil and sells it as a clean, modern replacement for lard — the first industrial fat marketed straight to your kitchen.
1909–1999
A thousand-fold jump
Per-capita soybean oil consumption rose more than 1,000×. Linoleic acid went from a trace of the diet to the dominant fat in the food supply.
1950s
The hypothesis
Ancel Keys popularizes the diet-heart idea: saturated fat raises cholesterol, cholesterol causes heart disease. Even his peers note the evidence is thin.
1970
Seven Countries
Keys publishes the study that seals it — built on seven countries chosen to fit the story, and quietly leaving out the ones that didn’t.
1980
It becomes law
The first Dietary Guidelines for Americans tell the country to avoid saturated fat. Seed oils are now the officially recommended replacement.
Today
In almost everything
From “heart-healthy” spreads to the oil in nearly every restaurant fryer and packaged food. The waste product won.
